How to uninstall Office 2003 before Office 2007 installs through Group Policy?

I have followed microsoft’s instructions to push out Office 2007 through the ProPlusWW.msi. However, according to the article, you can upgrade your previous version by editing the software installation package in the “upgrades” tab, as long as the previous version was also pushed out via group policy. Well, our 2003 WAS pushed out Group Policy and I followed all the steps, but it still won’t uninstall 2003. What gives?
